With a portion that is imported Italian cabinet devoted to buffalo-milk gelati, a 24-hour opening policy, and staff that comes direct from Italy Augustus’s team Augustus is truly committed to the craft of making.
The owners Joe Milinaro and Paul Vernuccio have been working in the hospitality industry for many years. Milinaro runs Roasting Warehouse in North Melbourne and Vernuccio is the manager of Augustus’s neighbor, George Jones.
This is a project of passion for two friends. They decided to concentrate on gelato due to its playful elements including the vibrant colors, texture, and the nostalgic connection to their childhoods in Italian families.
There are 32 flavors available, freshly made every day. Pistachio is the most favorite, as is the dairy-free sorbets as well as the slightly off-centre options like charcoal vanilla.
However, it’s the variety of buffalo-milk gelati that distinguishes this shop. After being approached by a farmer from North Queensland to test his milk, Augustus became the first location in Victoria to turn the lactose-free gelati. It’s deliciously creamy , and flavors are simple in order to showcase the milk’s purest form. The fior di lattes is a must-have, thanks to its smooth texture and taste that reminds you of vanilla.
